The olives we use to create this extra virgin olive oil (EVOO) come from a centuries-old organic family farm in Toledo.
It’s a monovarietal oil made from 100% early-harvested Cornicabra olives, which are cold-pressed at a temperature of less than 20°C.
Limited edition
Recommended for dressing salads, open sandwiches and hot dishes just prior to serving.

The organic label

Bearing in mind the respect that Mother Nature deserves, we decided to apply the principles of organic farming to the way we care for our olive groves.
We don’t use chemical products of any kind (insecticides, herbicides or chemical fertilisers).
Moreover, we firmly believe in biodiversity and in a balanced, healthy ecosystem as the basis for developing our cultivation and producing a healthy, top-quality product.
After registering as an organic farm, we underwent a three-year conversion period before being awarded the organic label. Since then, we’ve received annual visits from a technician who inspects the crops in order to renew the certification.
Furthermore, the oil is analysed after production to verify that there are no traces of chemical products. Because, by taking care of the environment, we are also taking care of our own health.

The label

One of the main pillars of Proyecto Los Aires is the respect we pay to each and every stage of the process in order to obtain high-quality extra virgin olive oil, opting for organic cultivation and an early harvest.

As well as putting the utmost care into our products, we want to tell all our potential customers about it. That’s why, right from the outset, our label doesn’t simply contain a name and description, but rather sets out everything we do and how we do it, because education and understanding are a key part of our project.

We don’t just want to produce and sell oil – our goal is to enable every buyer to understand, appreciate and enjoy it. This closes the loop and brings greater meaning to our project.

With that in mind, the team at cienmilCUARTOS designed us a label featuring fantastic illustrations and short annotations. The drawings provide an insight into the elaborate process involved in turning the olives from our centuries-old trees into an oil for you to enjoy.
